Finding quiet Gondola routes

I really want a gondola ride that goes through quiet, "secret" canals, not just the Grand Canal with all the big boats. Are there specific docks I should go to? I've heard the ones near San Marco are the busiest. Any advice on how to ensure a peaceful route where we can actually hear the water?
